Where are Sam’s favourite spots in Surrey?

Sam Daffin is the founder, chef and pitmaster behind Dirty Sixth, based at The White Hart in Witley.

Cooking out of a 16th-century coaching house, Sam’s food is a long way from standard pub grub. It’s “Modern British BBQ'“ – a twist on the slow-cooked, smoky food of the American South. There are silky meats, stacked burgers, dirty fries and unapologetic, caveman-like eating that demands you leave your cutlery and dignity at the door.

The menu has proved popular with Surrey’s best chefs. So, where does Sam go when he wants someone else to do the cooking?

Best Restaurant in Surrey

The Third Monkey — Farnham.

Sticky Beef & Bone Marrow Eclair, Pickled Foraged Mushrooms with Truffle Custard @ The Third Monkey.

“The Third Monkey is my favourite restaurant in Surrey. I could say something obvious like Sorrel, but The Third Monkey is relaxed yet adventurous in a really cool venue. It’s the kind of place I want to go back to again and again because it’s accessible.”

Best Pub in Surrey

The Barley Mow is a rarity: a community-owned pub.

“A proper, old school pub which was bought by the village a couple of years ago. It’s now run by a proper pub landlord, Lee, and his recently departed (RIP) Helen. There’s always a warm welcome and it’s the kind of traditional grub you need when you want to feel looked after – feels like a big, warm hug. Nothing flashy, just honest cooking at locals’ prices.”

Best Curry in Surrey

Dilli — Haslemere.

Orange and passionfruit cream, tonka cream, brulee almond pressed streusel, passion fruit sorbet.

“I don’t normally go for posh curries. A tasting menu and wine flight with a 'ruby murray’ doesn’t really tickle my taste buds. But Dilli strikes a fine balance. The food is elevated without tipping into pretentious. The service is friendly and well drilled without being overbearing, which can often be the case in this type of restaurant.”

Best Pizza in Surrey

Bucci Pizza — Milford, Grayswood & Applegarth.

Bucci’s trademark airy & crisp-bottomed dough.

“Ben operates out of an amazing trailer at various spots. His pizza is on a whole new level. Before I tried his, I thought all Neapolitan pizza was supposed to have a soggy bottom and needed to be folded to be eaten without making a mess, but Bucci pizza actually holds up under the weight of artisan ingredients. His sourcing is impeccable, and his pizza is as good as it gets.

Best Value in Surrey

Chicken Badders — The Falkland Arms, Dorking.

Fried Chicken Sandwich @ Chicken Badders.

“Another under-the-radar, chefs-day-off treat. Chicken Badders is some of the best fried chicken I’ve ever had, and in the pursuit of perfection… I’ve eaten a lot of fried chicken.

Josh, the founder and chef, is punchy with his flavours and his enoki mushrooms are a thing of beauty. It’s well worth driving past every KFC, Slim Chicken, Popeyes and any other chicken shop because you know it’s going to be a proper munch. “
